Hygiene and disinfection of commercial refrigeration
1. When commercial refrigeration enters and exits commercial refrigeration, it needs to come in and out of the commercial refrigeration, which will increase the chances of microbes contaminating the surrounding environment. There should be no sewage and garbage around the commercial refrigeration, and the venues and walkways around the commercial refrigeration should be cleaned and disinfected regularly. 2. Sanitation and disinfection of cabinets and tools and equipment The cabinet of commercial refrigeration is a place where food is cold processed and stored for a long time. The sanitation management of the cabinet is the central link of the entire commercial refrigeration hygiene management. In the cabinet, molds multiply faster than bacteria and can easily damage food. Therefore, the cabinet should be disinfected irregularly. Skids, trolleys and other equipment should be regularly washed and disinfected outside the cabinet. You can rinse with hot water first, and use 2% alkaline water (50°C) to remove oil stains, and then use a bleach solution containing 0.3% to 0.4% of available chlorine to disinfect. All processing equipment, such as weighing pans, hooks, workbenches, etc., should be rinsed with clean water before and after use, and hot alkaline water should be used for disinfection when necessary. The walkways and stairs in the commercial refrigeration should be cleaned frequently, especially when entering and exiting the cabinet, the ground meat and other residues should be cleaned in time to avoid environmental pollution.
3. Commercial refrigeration disinfectants and methods of disinfection
1) Antifungal agents There are many types of antifungal agents for commercial refrigeration, which are often mixed with paint materials for painting.
(1)) Sodium fluoride method. Add 1.5% sodium fluoride (or iron fluoride) or 2.5% ammonium fluoride to the white clay, and mix it into an aqueous solution to paint the walls.
(2) Sodium hydroxybiphenol method. When mildew is serious, 2% sodium hydroxybiphenol solution can be used to paint the wall in a cabinet with positive temperature, or a whitening mixture with the same concentration of medicament solution can be used for painting. After disinfection, the floor must be washed and dried and ventilated before commercial refrigeration can be used. Use this method for disinfection, do not use it alternately or mixed with bleach toThe wall is maroon-red.
(3) Copper sulfate method. Mix 2 parts of copper sulfate and 1 part of potassium alum, take this mixture and add 9 parts of water to dissolve in a wooden barrel, and add 7 parts of lime when painting.
(4) Mix 2% sodium peroxyphenol sodium salt water and lime water for painting.
